Ingredients1/2 cup maple syrup1/2 teaspoon vanilla extract1/4 cup coconut oil melted1 cup gluten-free flour1/3 cup tapioca flour1 1/4 teaspoon baking powder1/4 teaspoon Himalayan saltIcing1 container vanilla or chocolate coconut oil icing (such as Simple Mills Frosting)sprinkles for decoratingInstructions
Preheat the oven 350 degrees F. Line a baking sheet with a silicone mat or parchment paper. In a mixing bowl add the maple syrup, vanilla and melted coconut oil. Quickly add the gluten-free flour, tapioca flour, baking powder and salt and mix until it forms a dough. If the dough is too sticky, set it in the refrigerator for 15 minutes before rolling it out.

Roll out the dough in between two pieces of wax paper until the dough is about 1/4 inch thick. Using cookie cutters, cut out the dough into desired shapes. Place on the prepared baking sheet and bake for 8-10 minutes. Let cool for 3 minutes before transferring to a cooling rack. Cool completely before icing.

Divide icing into small Ziplock bags. Seal closed, removing extra air. Slice with scissors a small slit on one of the bottom corners. Cut very small to allow icing out. Decorate cookies with icing. Have a wooden spoon on hand or butter knife for kids to smooth out the icing. After icing, add favorite sprinkles and cookie decorations.
