Garwood Grub Exclusive Cheesecake Recipe

This is a Garwood Grub special cheesecake recipe that has the tartness of lime zest and the soft sweetness of white chocolate. This is a standard New York style cheesecake which means it has no base like a cookie or graham cracker outside crust. We cook the cheesecake in a cake pan with a removable base so its easier to separate from the pan. When I have cooked in a non removable cake pan, I have to serve the cake in the pan , because its impossible to take out clean.

Ingredients:





2.5 Cups Cream Cheese
3/4 Cups Sugar
2 Tbsp all-purpose flour
Zest of two limes
2 Bars White Chocolate/ Or 1.5 Cups White Chocolate Chips
Juice of one lime






Your arms and your whisk will thank you if you leave the cream cheese out for half hour!





Preheat the oven to 350 degrees F. Butter 9-inch removable base cake pan. Take out cream cheese and let it set for at least a half hour. ( This will make it easier to whisk later, your welcome) Crack your eggs, whisk , and leave in a separate small bowl.
Roughly chop up your white chocolate bars or take your chips out of the bag. *Pro tip* If you are using white chocolate bars freeze the bar before chopping for easier cutting.
Beat together the cream cheese and sugar in a large bowl until thoroughly combined. Add your eggs to the cream cheese mixture 1/3 at a time until combined.

Add your lime zest, juice, and chocolates
Whisk in the flour, white chocolate, fresh lime juice, and lime zest leaving a small amount of zest for the topping.




Tapping your cake pan will ensure no bubbles
Pour the mixture into a buttered cake pan, tapping it against the counter (place a towel down) to remove any air pockets that could be in your cheesecake.

Bake in the preheated oven for 35 minutes, or until set on the edges but wobbling slightly in the middle.

Once cooled, refrigerate until cold for at least 4 hours. Use a knife to separate the edges from the cake pan, and carefully remove the cake base front the pan.

Sprinkle with remaining lime zest and serve!
